THE KAHALA HOTEL & RESORT YOKOHAMA, which celebrated its 5th anniversary in September 2025, will be selling a special Valentine's Day chocolate cake, "THE KAHALA Gâteau Basque au Chocolat," at THE KAHALA Lounge for four days only, from February 11th (Wednesday, national holiday) to February 14th (Saturday), 2026. Reservations will begin on January 8th, 2026 (Thursday).

This Valentine's Day cake is a classic, carefully crafted to bring out the unique flavors of its ingredients, based on the traditional French Basque dessert "Gâteau Basque." It features a two-layer structure with a rich ganache encased in a fragrantly baked cookie dough. Semi-dried figs are added for added accent. The ganache is made with 70% cocoa chocolate, which has a roasted aroma and a subtle hint of dried fruit. The crunchy texture of the figs and the natural sweetness of the fruit add depth to the bitter flavor of the ganache.
This Valentine's cake for adults is a harmonious blend of three different textures and flavors, leaving a deep, lingering aftertaste.Its subdued sweetness allows the cocoa flavor to spread quietly and impressively.

What is important to us when making sweets is the classic style. We continue to adhere to the teachings of "valuing the basics" that we learned at authentic French patisserie restaurants such as Troisgros. Another important thing is the ingredients. Ingredients such as flour, eggs, and raw milk are the foundation of sweets. We carefully select our ingredients, express our gratitude to the land and producers that nurtured them, and use our ingenuity to bring out the natural flavor of the ingredients. We strive every day to provide sweets that bring a smile to the faces of our customers as they take a bite, and beautiful sweets that will lift their spirits.

1985 Entered the world of pastry chef at the Swiss pastry shop "Heidi" in Kobe
1988 Gained experience at Lepidor in Denenchofu, Tokyo
1992: Trained for three years in Paris, Bordeaux, and Lorraine, including at the three-star restaurant Troisgros
1995: Returned to his hometown of Fukuoka and gained experience as a chef pastry chef at a Western confectionery shop.
Joined Resort Trust in 2001. Oversees the pastry department at Grand Xive Hatsushima Club.
2004: General manager of the pastry department at Xive Karuizawa
2006: General manager of the pastry department at XIV Biwako
2008: Became chef patissier at the limited-time store "Partition" in Hoshigaoka, Nagoya
2014: Became chef pastry chef at St. Joseph's Hall in the Catholic Nunoike Church
In 2019, he became the chef pastry chef at the opening of Laguna Bay Court Club.
In 2020, he became the head pastry Chef THE KAHALA HOTEL & RESORT YOKOHAMA and Yokohama Baycourt Club.
