"Autumn Flower Tea Ceremony" - Savor the colorful seasonal flavors that will decorate your table

THE KAHALA HOTEL & RESORT YOKOHAMA (Address: 1-1-3 Minatomirai, Nishi-ku, Yokohama, Kanagawa Prefecture / General Manager: Yasutoshi Abe), which will celebrate its 5th anniversary in September 2025, will be serving the "Autumn Flower Tea Ceremony" at Japanese Hanagoyomi, for a limited time from Friday, September 5 to Sunday, November 30, 2025.

Hana Chazen expresses the changing seasons with bold tableware and delicate dishes, focusing on presentation and seasonal flavors that allow you to sense the season at a glance. Chef Nobuhiro Aoki carefully prepares the dishes, adding minimal touches at the optimal timing, and places importance on simply bringing out the natural flavor of the ingredients.
The theme of the menu, which begins in early autumn, is picking up fallen leaves. As the lingering heat of autumn approaches, we hope to evoke the beauty of ancient Japan with a selection of seasonal dishes that capture the changing colors of the trees. Beginning with a matsutake mushroom dobinmushi (earthenware pot steamed in a pot) infused with the aroma of mushrooms in a dashi broth made from kurairi konbu seaweed and dried dried bonito flakes, the menu will delight both the eyes and the palate, with dishes including a three-tiered kasane (layered hassun) representing Japanese, Western, and Chinese cuisine, and an island tray featuring bite-sized sweets centered around seasonal fruits. The kasane hassun nigiri sushi selection features a selection of thick, fatty Miura horse mackerel, Misaki tuna, and Nagai tuna. The accompanying condiments enhance the umami of the ingredients. And the seasonal bowl is a standout. Picking skewers of autumn harvest from a large bowl is as enjoyable as picking up colorful fallen leaves.
