"Hana Chazen" The Coming of Spring

A graceful afternoon wrapped in the spring breeze

"Hana Chazen" is a healthy lunch created by Chef Aoki Japanese Hanagoyomi Kareki, making the most of the flavor of the ingredients. From mid-February, it will be served to your table in a light spring atmosphere.

As the steam rises, the bamboo shoots emerge, and when you pick them, a bamboo shoot chawanmushi appears. The spring tea ceremony begins with accents of wakame seaweed from Hashirimizu, Yokosuka, and plums from Odawara.
After enjoying tuna from Misaki, Kanagawa Prefecture, and nigiri sushi made with local fish caught in the waters off Kanagawa Prefecture, the three-tiered hassun sushi roll is presented.
The hassun dish, which includes seasonal ingredients such as firefly squid and spring cabbage, incorporates the essence of Japanese, Western and Chinese cuisine, evoking the exotic food culture unique to Yokohama, making you feel as if you are eating your way through the streets of Yokohama with every bite.
