Chinese cuisine that is usually only available to a limited number of guests Special in-room Chef only available at The Kahala Hotel & Resort Yokohama, based on the concept of ``the pleasure of tasting, the pleasure of seeing, and the pleasure of imagining'' by Daigo Kobayashi, head chef of the view tower. We will be launching a new “Modern Chinois In-Room Dining” plan from Wednesday, January 24, 2024.

The theme is "gourmet food comes from the same source" to help improve your beauty and constitution during the changing seasons when you tend to feel unwell. This Modern Chinois series is filled with Chef Kobayashi's desire to go beyond the concept of genre and cherish the spirit of Japanese soul culture, which is created using Japanese ingredients and Chinese cooking techniques. It comes in a box that looks like a treasure chest. You can fully enjoy the cuisine prepared by our Chef, Kobayashi, who has been studying Chinese cooking techniques for over 30 years, has a unique cooking technique, and has a unique aesthetic eye for ingredients. This dish, created with a Japanese and Chinese spirit, is both innovative and deeply flavorful, allowing you to experience a new side of Chinese cuisine.

1st Box: <Kenbi>

Seasonal vegetables are served as garnishes for a healthy finish, such as ``grilled scallops'' with the scent of oolong tea, and ``seafood dim sum'' with the umami of vegetables and seafood. The abalone served with green papaya and jellyfish uses dried abalone, which is prized as one of China's three major ingredients. The abalone is slowly cooked at a low temperature in a soup made with chicken bones, and is characterized by its concentrated umami, moistness, and deep nutritious flavor.

2nd Box: <Breath>

The ``Shagyo Chicken'' has a warming onion and ginger sauce, and the ``Spare Ribs'' has a deep flavor of dried plums and fragrant pepper. The melt-in-your-mouth Kuroge Wagyu beef is coated with spicy chili peppers to bring out the sweetness of the meat. All of them have a flavor that is full of vitality that makes use of the ingredients.

3rd Box: <Harvest>

"Singapore style" mooncakes are Chef Kobayashi's original classic dessert, which has a heavy weight, thin crust, and light flavor, and is a gorgeous bite that looks like a flower.The layers of crispy dough make it look like petals. As. ``Swallow's Nest'', which is said to be loved by Yang Guifei, is also said to be an edible serum, and has a smooth texture that soaks into your body.

Please enjoy Chinese tea "Yinshinhua Tea" along with modern Chinese sweets. Special quality tea leaves with silvery hair are scented with jasmine flowers, about twice the amount of tea leaves, over 6 times over several days to create a natural and gorgeous fragrance.

*Optionally, you can choose mapo tofu and rice or fried rice. Please order according to your preference. Mapo tofu is the signature of Chinese Cuisine View Lou. The juicy, rich flavor of finely crushed Japanese black beef fillet goes perfectly with the smooth silken tofu made from domestic soybeans. The secret to the exquisite balance of spiciness and sweetness is a blend of over 15 original spices devised by Chef Kobayashi himself, as well as an original chili oil made with those spices. It goes perfectly with the flavorful jasmine rice.

The new in-room dining plan, which is limited to 5 groups per day, allows you to relax in your room while looking out at Yokohama Bay without worrying about anyone watching you.In a completely private space, you can relax in a bay-view bath and relax in bed. We have prepared day use plans and accommodation plans for you to relax your mind and body while enjoying delicious food.
