Three types of Christmas cakes to decorate the holy night

The Kahala Hotel & Resort Yokohama's proud chef pastry chef Chef Kazuya Takada will sell all three types of original Christmas cakes for the heartwarming festive season in limited quantities from October 1, 2024 (Tuesday).
The Christmas cake, created by Chef Takada with the skills he has cultivated over the years and with all his heart and soul, reflects the "classic style" that he values in making sweets. Based on the attitude of "valuing the basics" that he learned at a patisserie restaurant in France, we will deliver a special Christmas cake that is spiced with heartwarming warmth and playfulness that will bring a smile to your face, befitting the festive season.
THE KAHALA FROMAGE / Limited to 60 pieces

The hotel's specialty baked cheesecake, which has been a hit since its release this summer, is now being offered for the first time with a Christmas twist.
The baked cheesecake dough is a blend of cream cheese, fresh French fromage blanc, and crème double (high-fat cream) to bring out its richness. In addition, fresh eggs from Sagamihara, Kanagawa Prefecture, "Keiju Eggs," are added, and the mixture is mixed smoothly without incorporating air, and honey and white chocolate are added to add sweetness and richness. Vanilla and lemon balance the aroma, mellowness, and acidity. Baked in a water bath, the result is a moist and smooth baked cheesecake. The crunchy and fragrant crumble base adds a nice texture, making this a lovely cake with the Christmas colors of white, red, and green, perfect for after a Christmas feast.

The popular "THE KAHALA OPERA" with its French flair will also be available in a Christmas version. This signature cake was created by chef pastry chef Kazuya Takada, who carefully cultivated the traditional opera recipe he encountered in France. It is also served as a dessert at the main dining restaurant RISTRANTE OZIO, and is extremely popular with customers.
Coffee, which is the key to the aroma of the opera, is extracted by slowly steaming the espresso served at our hotel. The dough soaked in this coffee extract spreads the elegant aroma of coffee with every bite. The butter cream also has anglaise added to it to add richness. The chocolate ganache is made with Valrhona couverture (approximately 70 % cacao) and has a smooth texture. The gorgeous atmosphere reflected by the gold leaf on the surface and the cross-section of the cake with its many layers represent the magnificent auditorium of the Paris Opera House, creating a gorgeous Christmas atmosphere.

The new product, "The Kahala Christmas 2024," is a modern take on the classic French pastry, "Marjolaine."
The fragrant dough is made with roasted almonds and hazelnut powder, and is soaked in cognac syrup to create an even more fragrant dough. The smooth vanilla cream, praline cream, and ganache cream are sandwiched between the chocolate mousse made with Valrhona's Jivara Lacte, giving it a rich flavor. The bottom is made with hazelnut crumble, which gives it a crispy texture and makes it delicious to eat again and again.
